The missing ingredient

We went to the store today to get food for the recipes I brought with me. Of course I forgot one key ingredient for each dinner I had in mind, so Jane drove to the nearest convenience store to get a can of tomatoes. I think the casserole turned out well considering I couldn't use any garlic or bell peppers (called capsicums here) because the acid makes Jane's family sick. 

Can't go wrong with corn, beans, and squash!


Between the store and dinner, since it gets dark around 6 p.m., Jane and I walked to a nearby park where they have a lot of tamarind trees. These would have come in very handy when I was making pad thai a few weeks ago, but I will have plenty of chances at a second attempt once school starts and I am in charge of all my own meals.
